Barbacoa
Voici une spécialité culinaire du Mexique dont je raffole: le barbacoa.
Le barbacoa est une préparation traditionnelle qui remonte à l'époque pré-hispanique de viandes diverses, mais en particulier du mouton. La viande est cuite lentement à ciel ouvert mais recouvert de feuilles et placée dans un trou. La photo ci-dessus est du barbacoa de mouton, avec la viande à droite et la panse du mouton à gauche. Le bouillon de barbacoa est également délicieux!
It generally refers to meats or a whole sheep
slow cooked over an open fire, or more traditionally, in a pit covered
with leaves, although the interpretation is loose, and in the present
day and in some cases may refer to meat that was steamed until tender. Throughout Mexico, from pre-Colombian times to the present, barbacoa (the name derives from the Caribbean indigenous Taino barabicu) was the original Mexican barbecue, utilizing the many and variedmoles (pronounced "mol-ehs", from Nahuatl molli) and salsa de molcajete, which were the first barbecue sauces.
